1 1/2 lbs. Chuck Steak or round steak, cut into 1 inch pieces<br />
1/2 onion - then cut in half and separate<br />
1 c. sliced celery<br />
1-2 c. sliced carrots (we didn't do as see in picture) BUT definitely add - we be so GOOD!<br />
1 Tbsp. Minced garlic<br />
1 can diced tomatoes (kids don't like tomatoes, me either - puree them, then they are so good!<br />
1 can tomato sauce<br />
1/2 c. low sodium beef broth stir with ! Tbsp. flour, 1/2 tsp pepper, 1/2 tsp. garlic powder<br />
1/2 Tbsp. Worcestershire sauce<br />
1/2 tsp salt<br />
1/2 tsp pepper<br />
In slow cooker combine onion, celery, garlic and carrots. Add beef and top with the salt and pepper and worcestershire sauce. In a medium bowl combine tomatoes(or puree) and tomato sauce, and the beef broth mixture. Pour over the steak mixture. Cover, set cooker on low for 8-10 hours or high for 6 hours. Serve over mashed potatoes and with a green side salad.<br />
Mashed potatoes - peel and cube at least 1 potato per person cover with water, bring to boil then reduce heat a little for a gentle boil till done, about 20 minutes {( I season the water with garlic and onion powder and some pepper :)} Drain water (you'll know done when fork tender) put back in hot pot - add either a little milk and unsalted butter or add low sodium chicken stock. Mash with a potato masher. 1/2 tsp dried Oregano, crush in fingers to release flavors<br />
1 1/2 Tbsp tomato paste<br />
1 Tbsp packed, brown sugar<br />
1/2 Tbsp Worcestershire sauce<br />
1 c. chicken stock<br />
1/2 tsp cornstarch<br />
1/2 c. tomato sauce<br />
4-6 hamburger buns, regular or whole wheat - toasted.<br />
Topping ideas: crushed tortilla chips, fresh cilantro or parsley, shredded light mozzarella pepper jack or cheddar cheese, or raw chopped onions.<br />

Heat EVOO add meat to brown. Drain fat if necessary. Add garlic, onion, and season with Mrs. Dash. Cook until onion softens a few minutes, Then add chili powder, paprika, allspice, cloves, and oregano. Stir to release flavors of spices then add tomato paste, brown sugar, and worcestershire sauce, stirring for a minute or two. <br />

Add the stock with cornstarch and the tomato sauce and bring to a boil then reduce heat to simmer for several minutes to thicken. To bump up protein and fiber can add beans at this point if wish - suggest red kidney beans. Rinse well and drain before adding (eliminates extra salt). Heat through. Tacos<br />
1.2 - 1.25 lbs ground meat: beef, chicken, turkey<br />
brown in 1-2 Tbsp olive oil and drain grease off.<br />

Wow, what a title... I'll be discussing flour storage. All purpose flour can be stored at room temperature in a tightly sealed container for one year. You can double this amount of time by either storing it in the fridge or freezer. Whole wheat flour is a little different, it tends to go rancid faster. It can be kept in the fridge for 8 months and in the freezer for 2 years. Keeping it in a container at room temp it will last for a few months.<br />
<br />
One tip I can give you to remove possible Weevil infestation - when you buy the flour, put it in the freezer for 3 days before putting it into your storage container. This kills all Weevil and Eggs that may be in the flour. (There is an allowable number of bugs that can be in the flour and still be sold – disgusting=yes, but true. However if you think about the fact that wheat is grown outside, etc it is understandable-nature is nature.) I have done this for the past 3 years and have not ever had Weevil in my flour, it has been great!<br />

Worcestershire sauce<br />1/2 tsp. garlic powder<br />1 Tbsp. chili powder<br />3/4 tsp. black pepper<br />1/2 tsp. Chipotle chili powder<br />1/2 tsp. cumin<br />3/4 Tbsp. salt<br />3/4 tsp. ground allspice<br />8 oz. can tomato paste<br />3/4 Tbsp. cider vinegar<br />1 lrg. and 1 small whole bay leaves<br />Crumble raw hamburger (do NOT brown) into water, add all ingredients, stir with wooden spoon while bringing mixture to a boil, then simmer, uncovered, for 3 hours, chili will thicken as it cooks, stirring occasionally. Due to raw meat in initial mix - DO NOT taste for at least 1-2 hours. Remove bay leaves. Serves 5 to 6. Serve and top with cheese, and onions, if wish. Pour into basin and allow to set for three minutes. Scrub with brush and rinse.<br /><br />Rust Remover <br />1 lime<br />Salt<br />Sprinkle a little salt on the rust. Squeeze a lime over the salt until it is well soaked. Let the mixture set for two to three hours. Use the leftover rind to scrub the residue.<br /><br />Glass Cleaner <br />1/4 cup white vinegar<br />1 tablespoon cornstarch<br />1 quart warm water<br />Mix ingredients above. Pour into a spray bottle or apply with a sponge. For lint-free results, wipe dry with crumpled newspaper instead of paper towels. Apply a thin coat to the wood surface and let set for five minutes. Juice (Orange, Pineapple, Apple, or a 100 % juice)<br />2 bananas<br />12 oz. frozen pineapple (great tip - buy canned in pineapple juice, dump in a baggie and freeze)<br />1/2 c. frozen strawberries<br /><br />Mix all put last two ingredients - when combined open and place pineapple in, blend - when well blended - drop strawberries in as they will act like ice cubes and start freezing and thickening the drink - mix really well. Put the chicken in a large roasting pan and coat with the pureed mixture. Let the chicken marinate for about 30 minutes.<br /><br />Heat the oven to 450 degrees F. <br /><br />Cook the chicken legs in the upper third of the oven for 15 minutes. Chili Powder<br />1 tsp. ground cumin<br />2 heaping tsp. garlic powder (with no salt added)<br />3/4 tsp. sea salt<br />1 pinch ground cinnamon (less than 1/16 tsp.)<br />3/4 tsp. sugar<br />5 Tbsp. cold water<br />4 Tbsp. white flour<br /><br />Directions:<br />In a 2 quart sauce pan add the chicken broth, chili powder, garlic powder, cumin, salt, cinnamon and sugar (the sugar is a little secret to eliminate any bitter taste from the chili powder).<br /><br />Use a whisk to mix everything well. Heat to a boil, reduce heat to a low boil and cook for 3 minutes.<br /><br />Whisk frequently to make sure all spices dissolve. This is important for flavor and a nice smooth sauce.<br /><br />While the sauce is on a slow simmer/boil, add 5 tablespoons of cold water in a small bowl.<br /><br />With another whisk mix 1 tablespoon at a time of flour. Whisk vigorously to avoid lumps. If you have lumps here, you will definitely have lumps in your sauce.<br /><br />After 3 minutes of cooking sauce, turn the heat up to high. Very slowly, pour the flour mixture into the boiling sauce. Here you must whisk the sauce vigorously while adding the flour to avoid lumps.<br /><br />After all the flour is added, continue to whisk for one minute. You can turn the heat down to medium during this time. Just make sure the sauce is boiling.<br /><br />Turn off the heat, this enchilada sauce recipe is done.<br /><br />You will notice that as this sauce sits it will form a "skin" on the surface. This is normal and in fact the longer the sauce sits the thicker this skin becomes.
